What is Gaz?

The word “Gaz” comes from “gaz-angebin,” meaning “Honey of Gaz”—a reference to the sap of the Tamarisk tree (Tamarix gallica), native to the Zagros mountain range west of Isfahan, Iran. While traditionally believed to be tree sap, Gaz is actually derived from a natural exudate found on the tree, often collected in late summer.

A 450-Year-Old Tradition

Gaz dates back over 450 years to the region of Isfahan, where locals began blending the harvested sap with flour, nuts (like pistachios and almonds), bread, and chocolate—a process that evolved from home-based traditions to artisanal and industrial production.

The Tamarisk tree, which grows up to 2 meters tall, thrives in the mountainous regions of Bakhtiari and Khansar. Its yellow, millet-like grains appear in late summer, and must be harvested before the autumn rains, making it a seasonal and precious ingredient.
